Anyways, that's all besides the point. Let's talk about being vegetarian, or at least vegetarian recipes. As a tofu lover myself, I consider myself a flextarian. I eat meat, but I also incorporate a lot of the vegetarian eating habits into my diet. Recently, M has been open to eating healthier, but going beyond just healthy to try out vegetarian recipes.

and I eat mostly vegetarian through the week, especially at lunch. I get protein through shakes. I made veggie calzones for lunch this week & they're definitely tasty!

I'm a veggie! Mostly I eat "normal" foods. Pasta and whatnot. But I guess it's all normal to me now! I always want to try more recipes, but I don't have time/money often to experiment on recipes I might not like. Boo. Someday!

I try to go weekday veg as much as possible, but the boy is SO hungry and eats so much that a lot of the time he is still hungry after dinner! There are a lot of great recipes over at skinnytste.com!

I'm not a vegetarian, but I love making veggie meals. I don't always want or need a protein with dinner, so veggie dishes are the way to go!

This is something we need to do more of too. Even though we eat meat we should incorporate more meatless meals in the week. There is a mushroom gallette that I really like and I posted the recipe on my blog a while back.
