Oven-Fried Okra

Another Pinterest find! I followed this recipe from Disney Family provided by the American Heart Association. I followed it almost exactly, except for one major thing...I didn't thaw the okra first, so I ended up cooking it for an extra 10 minutes. I also added more salt and pepper once it was cooked. Oh well, it was still tasty, and surprisingly healthy!

Ingredients:
canola oil cooking spray
- 1 20 oz. bag frozen sliced okra, thawed
1 teaspoon salt
- 1 teaspoon pepper
- 2 cups yellow corn meal
- Plus salt and pepper, to taste

Directions:
1. Preheat the oven to 475* Fahrenheit. Line a baking sheet with aluminum foil, and spray generously with cooking spray. Set aside.
2. Spray the inside of a gallon-sized ziploc bag with cooking spray. Add the okra, teaspoon of salt, and teaspoon of pepper. Close the bag and shake well to blend. Let the bag sit for ten minutes. 
3. Add the cornmeal to the bag and shake well to ensure all of the okra is coated. Let sit for 10 minutes, then shake again.
4. Using a mesh strainer or colander, scoop out okra and shake the colander in the bag to remove excess cornmeal, then place okra on baking sheet. Repeat until all okra is removed. Discard the remaining cornmeal and bag.
5. Spray the okra generously with cooking spray. Bake for 30 minutes, or until golden brown and crunchy.
6. Remove from the oven, add salt and pepper to taste, and enjoy!

I've never tried Okra! What is it like? Ha ha, that might be a hard question to answer :)

I have some leftover okra and didn't want to make a whole pot of gumbo, so this is what I should do with them! I think I might try Whole Wheat Panko bread crumbs, but either way sounds yummy!

Yum! I really want to try this! I love fried okra but haven't had it myself - and I don't like frying things at home. I prefer fried food to be an occasional treat when we eat out so I'm definitely going to have to try this baked version soon (especially because this is a dish we love in the South and i've been missing Southern food lately!)
